SERVES 2–3. This recipe uses the same quantity of white sauce made in the previous recipe. Just follow the directions for it and add 50–60g of mature or smoked Cheddar to the sauce before pouring over the dish.

200g steamed broccoli

6 bacon rashers, grilled until just crisp

Salt and pepper to taste

300ml white sauce (see above)

50–60g Cheddar, either mature or smoked

Step 1:
Place the cooked broccoli in a buttered ovenproof dish and cut each cooked bacon rasher into 3 pieces. Arrange around the broccoli. Season to taste.
Step 2:
Pour over the cheese sauce and bake for 10 minutes in a hot oven, or place under the grill until the top browns. For crispiness, sprinkle 2 tablespoons of breadcrumbs over the top before browning. Serve with crusty bread.
