SERVES 4. Another quick, easy and tasty recipe using bacon.

1 large onion, chopped

4–5 medium potatoes, peeled and cut into chunks

Salt and pepper to taste 100–150g Cheddar, grated

8 rashers of bacon

Step 1:
Preheat the oven to 200°C/gas mark 6.
Step 2:
Boil the onions and potatoes together in a pan with sufficient salted water just to cover them. Cook until just tender.
Step 3:
Drain the potatoes and onions and put them into a buttered ovenproof dish.
Step 4:
Season to taste and sprinkle the potatoes with the grated cheese; use as much as you like.
Step 5:
Place the rashers of bacon over the potato mixture.
Step 6:
Put in the oven and bake until the bacon is fully cooked – about 20 minutes.
