SERVES 4. This is a tasty twist on the traditional sausages baked in a Yorkshire pudding. It can also be an easy labour-saving meal – if you make your batter the day before.

180g plain flour

2 eggs

600ml milk
-
8 thick pork sausages

Lard for greasing
-
100g Cheddar, grated

Salt and pepper to taste

Step 1:
Preheat the oven to 220°C/gas mark 7.
Step 2:
Sift the flour into a mixing bowl. Blend in the eggs with a wooden spoon.
Step 3:
Whisk in the milk gradually and continue to whisk until small bubbles appear on the surface of the mixture. Leave to stand while the sausages are prepared.
Step 4:
In a frying pan over a medium heat, lightly brown the sausages all over. Either leave them whole or cut each one in half and brown the centre.
Step 5:
Grease a baking tin or ovenproof dish with lard – this heats to a higher temperature than oil – and arrange the sausages over the bottom of the tin.
Step 6:
Stir half of the cheese into the prepared batter and pour it around the sausages.
Step 7:
Sprinkle the rest of the cheese over the sausage and the batter.
Step 8:
Bake immediately in the preheated oven for 25–30 minutes, or until the pudding has risen around the sausage and is brown and crisp.
