SERVES 4. This is similar to a tapas dish we once tried in a restaurant. It was so good, but I’ve had to guess the ingredients for this version because they wouldn’t tell me!

4 garlic cloves, chopped

8 chicken thighs, skinned and boned

200ml dry white wine

8 ground black peppercorns

A little olive oil for frying

Salt to taste

1 tablespoon chopped fresh chives

1 tub crème fraîche

2 tablespoons chopped fresh parsley

Step 1:
Rub the garlic into the chicken and place in a dish. Pour over the white wine and ground peppercorns. Leave to marinate for 1½ hours.
Step 2:
Lift the chicken out of the marinade and fry in a large frying pan with a little olive oil. When the chicken begins to brown, pour in the marinade and bring to the boil. Reduce the sauce slightly and season with salt to taste.
Step 3:
Add the chives and turn the heat down to simmering. When the chicken is cooked, stir in the crème fraîche and parsley and turn off the heat.
