SERVES 4. This uses brioche instead of bread. It gives a richer flavour, but you can still use ordinary bread if you wish.

Butter for spreading and greasing

4 slices brioche, well-buttered and cut into triangles

100ml double cream

300ml milk

100g dark chocolate, broken into small pieces

3 eggs, beaten

2 tablespoons soft brown sugar

Grated chocolate for topping

Step 1:
Preheat the oven to 190°C/gas mark 5. Butter an ovenproof dish and arrange the brioche evenly over the bottom.
Step 2:
In a saucepan, add the cream and the milk, then heat very gently until it feels slightly hotter than your finger. Add the chocolate pieces and allow to melt into the milk. Remove from the heat.
Step 3:
Beat in the eggs and stir in the sugar.
Step 4:
Pour the milk mixture over the brioche. Allow to stand for 30 minutes.
Step 5:
Bake in the preheated oven for 30–40 minutes, or until well-risen and set to the touch.
Step 6:
As soon as the pudding is cooked, sprinkle over some grated chocolate; this will melt into the surface.
Step 7:
Serve warm with cream.
