This is an Americanized version of a classic English dessert, the Chocolate Refrigerator Cake. I've tried to simplify and economize the process as much as possible without sacrificing any taste. This cake isn't baked, but sets in the refrigerator. No-Bake Chocolate Refrigerator Cake is extremely easy to make and tastes delicious.

12 oz Semisweet chocolate chips , (1 12 oz bag)

8 large Chocolate graham crackers , (1 package)

2 large Eggs , beaten

1 cups (½ pint) Unsalted butter

16 oz Powdered sugar , (1 lb box)

½ cups Milk

½ cups Walnuts , chopped

1 tsp Vanilla extract

½ cups Raisins or dried fruit , optional

1 large microwaveable bowl

1 8x8 inch baking pan or dish

Step 1: Line Pan With Cling Wrap
Carefully line 8x8 inch baking dish or pan with cling wrap, making sure it overlaps the pan and to press the wrap close to all the edges. Two sheets may be used to cover all areas.
Step 2: Mix Crumbs, Sugar, Milk, Eggs, And Vanilla Extract
Stir crumbs and sugar, then add milk, eggs, and vanilla extract until well blended. Mix may be lumpy; this is fine.

Step 3: Melt Butter And Chocolate
Melt butter and chocolate in a microwaveable bowl in the microwave at medium power until melted, stirring every minute, until melted through (3-4 minutes). If you don't have a microwave, you can melt the chocolate the traditional way in a double boiler or in a ceramic bowl over boiling water.
Step 4: Add The Mixtures Together
Add melted chocolate to crumb mixture, stirring slowly, until all ingredients are combined.
Step 5: Add Walnuts
Add walnuts to mixture, combining them well. You may wish to add half a cup of raisins or other dried fruit at this time if desired.

Step 6: Pour
Pour mixture carefully into wrap-lined pan or dish. Be sure to keep it even and, if necessary, flatten the top with the back of your spoon.
Step 7: Refrigerate
Refrigerate your cake three hours or overnight. No baking required.
Step 8: Cut and Serve
To serve your Chocolate Refrigerator Cake, carefully take the cake from the pan and remove all the cling wrap. On a wooden cutting board, cut into 1x3 inch rectangles with a sharp knife dipped in boiling water. Serve immediately or return to refrigerator until it's time for dessert.
