Being a Southerner married to a Yankee, let's just say I didn't
exactly get along with my mother in law. She always thought she
knew more than I did - especially in the kitchen! Well that all
changed when I learned this easy chocolate sponge cake recipe. I
love the delicacy of the sponge cake, and to make it taste even
better, I like to combine the basic sponge cake recipe with my
favorite food of all time...CHOCOLATE!!!
Ingredients:
9-inch tube pan
6 ounces of semisweet chocolate
4 eggs ¾ cup of sugar
1 teaspoon of vanilla
1/8 teaspoon of salt
½ cup of cake flour
Directions:
1) Preheat oven to 350 degrees F.
2) Line the bottom of a 9-inch tube pan with parchment or
wax paper cut to fit.
3) Melt the chocolate in a double boiler. Or, you can use a
small bowl or pan over a pot of simmering water. Set aside to
cool.
4) Beat the eggs until light.
5) Gradually add the sugar, vanilla and salt.
6) Stir in the melted chocolate.
7) Sift the flour over the batter and fold in until just
blended.
8) Spoon the mixture into the tube pan.
9) Bake for 45 minutes or until a toothpick inserted in the pan
comes our clean.
10) Invert the pan on a rack and let the cake cook completely,
or tip the pan over and insert a glass soda bottle or wine bottle
through the center of the tube pan to hold it in place.
11) Frost as desired.
There are other options you can try aside from frosting this
cake. Try heating up some fudge or caramel sauce to drizzle over
the cake and serve with vanilla ice cream and whipped cream. Fresh
fruit is also an option. Try drizzling with caramel and serve with
sliced banana and vanilla ice cream. Or sprinkle some fresh
raspberries over the cake. Drizzled fudge sauce and sliced
strawberries is a delectable treat too. Even chopped up walnuts or
crumbled chocolate cream cookies are a great idea. You are only
limited by your imagination!! I hope you enjoy my chocolate
