This is based on a Yorkshire pudding batter and is often made with cherries, which are delicious. Any orchard fruit can be used, but a combination of apples, raisins and cinnamon makes it a cold-weather treat.

Butter for greasing

450g Bramley or Granny Smiths apples, peeled, cored and sliced; keep covered with water containing the juice of half a lemon

50g raisins

1 tablespoon soft brown sugar

1 level teaspoon ground cinnamon

100g plain flour

75g golden caster sugar

3 eggs, beaten

300ml milk

Step 1:
Preheat the oven to 200°C/gas mark 6.
Step 2:
Butter an ovenproof dish and put in the apple slices. Scatter the raisins over the apple. Sprinkle with the brown sugar and cinnamon.
Step 3:
In a mixing bowl, sieve the flour and stir in the caster sugar.
Step 4:
Beat or whisk in the eggs and then add the milk.
Step 5:
Pour the batter over the fruit.
Step 6:
Bake for 30–40 minutes in the preheated oven, or until well-risen and golden brown.
Step 7:
Dust with icing sugar and serve hot with cream or cold with ice cream.
