How To Make Cookies With Cappuccino Zabaglione

SERVES 4. This is a wonderful dessert to make for a dinner party. You can make the cookies beforehand, even the day before they are to be served, so long as they are kept in an airtight container. Or make the dough and keep it in the fridge or freezer until you are ready to bake them.

150g butter
120g Demerara sugar
120g golden caster sugar
280g plain flour
1 egg
200g chocolate chips, buttons or chopped chocolate
Butter for greasing
6 egg yolks (Why not reserve the whites for a meringue recipe)
3 tablespoons caster sugar
120ml strong black coffee, cool
1 tablespoon Tia Maria, optional
250ml double cream
