A knob of butter

Half a red onion, chopped finely

200–250g cooked chicken, chopped

5 dried apricots, chopped

3 tablespoons mayonnaise mixed with 1 rounded teaspoon mild curry powder

1 tablespoon double cream

Step 1:
Melt the butter in a saucepan and sauté the onion gently until translucent. Allow to cool.
Step 2:
In a bowl, combine all the ingredients, including the cooked onions, and mix well.
