This is delicious served with steak, and precludes the need for potatoes or rice.

Olive oil for frying

2–3 shallots, chopped

1 red pepper, chopped

1 small courgette, chopped

2 garlic cloves, crushed

150g couscous, cooked according to the packet instructions

2 tablespoons chopped fresh parsley

1 level teaspoon fresh thyme leaves

Salt and pepper to taste

Step 1:
Heat the oil in a frying pan and fry the shallots lightly.
Step 2:
Add the pepper, courgette and garlic and fry until tender.
Step 3:
Remove from the pan and allow to cool.
Step 4:
Once cool, mix the vegetables with the couscous and finely chopped herbs. Add salt and pepper to taste.
Step 5:
Serve with a mixture of virgin olive oil and balsamic vinegar.
