SERVES 6. These are delicious served with a roast dinner or a steak.

800g parsnips, peeled and cut into 2cm pieces

Salt and black pepper to taste

100ml double cream

A knob of butter

50g walnuts, chopped

Step 1:
Preheat the oven to 190°C/gas mark 5.
Step 2:
Steam the parsnips for 15 minutes, or until tender. Add salt and pepper when cooked.
Step 3:
Put the parsnips in a bowl and mash them well with the butter and cream. Transfer to an ovenproof dish and scatter the top with the walnuts.
Step 4:
Bake for 15–20 minutes in the preheated oven. Serve hot.
