This can be used as an accompaniment but it’s also delicious in sandwiches, layered with lettuce and cucumber, or in a baked potato. Use chicken left from a roast if you like.

Oil for frying

½ small onion

1 teaspoon curry paste

2 tablespoons lemon juice

3 tablespoons mayonnaise

1 tablespoon double cream

150g cooked chicken

5 finely chopped dried apricots

Salt and pepper to taste

Step 1:
Heat the oil in a frying pan and sauté the onion until tender.
Step 2:
Add the curry paste and lemon juice.
Step 3:
Leave to cool thoroughly, then add the mayonnaise and cream.
Step 4:
Mix in chopped chicken and apricots and season to taste.
