This isn’t really Welsh Rarebit, but it is just as delicious. Grate more or less cheese if you wish; the amount below is only approximate.

1 egg yolk

½ teaspoon wholegrain mustard

4 tablespoons double cream

150g mature Cheddar, grated

Step 1:
Beat the egg yolk and mustard into the cream and mix into the cheese.
Step 2:
Spread onto freshly toasted bread, keeping away from the edge as it will spread under the grill.
Step 3:
Place under a hot grill until the cheese melts and browns. Serve immediately.
