SERVES 6. Use any fruit you wish for this and add a little cake to the jelly while it is still warm. Strawberry jelly and fruit cocktail go well together, or use sliced fresh strawberries in the summer. For an unusual variation, try using a can of tropical fruits and a lime jelly.

1 strawberry jelly, made according to the packet instructions, using fruit juice as well as water

1 x 300g can fruit cocktail (or fruit of your choice)

Broken up sponge cake, optional

600ml homemade custard (see

Either 1 x 280g can thick sterilised cream or 300ml double cream

Glacé cherries, chocolate flakes or hundreds and thousands

Step 1:
Pour the jelly into a trifle bowl and stir in the fruit and cake, if using. Refrigerate until set.
Step 2:
Spoon over the custard and spread it evenly over the jelly.
Step 3:
If using double cream, whisk until it forms peaks and spread over the custard. If using a can of cream, shake well and spoon over the custard.
Step 4:
Decorate as you wish with your favourite topping.
