SERVES 4. Use ordinary porridge oats for this recipe.

Salt and pepper to taste

4 herrings, filleted

100g oatmeal

A little oil for frying

3–4 rashers of bacon, chopped into small pieces

Lemon wedges
-
Sprigs of fresh parsley

Step 1:
Season the fish fillets and roll them in the oatmeal.
Step 2:
Heat the oil in a frying pan and fry the bacon until it is just cooked.
Step 3:
Add the fish and fry with the bacon for 3–4 minutes each side.
Step 4:
The bacon will crisp up by the time the fish are cooked.
Step 5:
Serve with the lemon wedges and parsley.
