SERVES 4. This really is cooked all in one pan. As long as it is a large frying pan, all the ingredients will fit in. Cutting the chicken, onion and pepper into small pieces means they cook much quicker.

A little olive oil for frying

1 onion, chopped into small pieces

4 rashers bacon
-
1 red pepper, chopped into small pieces

2 garlic cloves, grated

40–50g chopped chorizo sausage

450g chicken thigh meat, cut into small pieces

450g small new potatoes, boiled with the skins on and cut in half

Salt and pepper to taste

Step 1:
Heat the olive oil in a frying pan and fry the onion, bacon and pepper together. When the onion is soft, add the garlic and chorizo. Keep over a medium heat so that nothing burns.
Step 2:
Add the chicken and stir into the other ingredients. When the chicken has fried for a few minutes, cover the pan. If you haven’t a lid for your frying pan, just use some aluminium foil.
Step 3:
Cook over a low heat until the chicken is cooked through, then add the cooked potatoes. Squash them among all the other ingredients and cover the frying pan again until the potatoes are hot and have taken up some of the juices.
Step 4:
Serve straight from the pan with corn on the cob.
