SERVES 4. These are delicious served with potato cakes. They are also easy to cook on a barbecue if you want something different.

80g minced pork

25g breadcrumbs, made by grating a stale crust of bread

1 garlic clove, chopped

Salt and black pepper to taste

4 large porcini mushrooms

40g mozzarella cheese, chopped

Step 1:
In a bowl, combine the pork, breadcrumbs, garlic and seasoning.
Step 2:
Remove the stalk from the mushrooms, setting aside the caps. Chop the stalks roughly and add them to the pork mixture.
Step 3:
Stuff each mushroom cap with an equal amount of the pork mixture and top with some mozzarella.
Step 4:
Either place on an oiled baking sheet and cook at 200°C/gas mark 6 for 15–20 minutes, or place on the barbecue and cook until the cheese bubbles and the pork is cooked.
