If you are going to serve this immediately, omit the topping of melted butter. Instead, just sprinkle a little fresh parsley on top or add a fine sliver of lemon.

250–280g smoked mackerel, skinned and boned

80g butter

1 tablespoon chopped fresh parsley

1 small spring onion, chopped

Juice of 1 lemon

Salt and pepper to taste

50g melted butter

Step 1:
Put all the ingredients except the melted butter into a food processor and blend to a paste.
Step 2:
Put into containers and pour the melted butter on top of each to seal.
