This is an article on how to make Prawn Biryani. This is a family recipe that I tweaked to my families liking and it has served us well. Because of allergies to Coconut we had to alter it. We hope you enjoy it!

17 ½ oz Prawn cutlets , Around 20 very large prawns

1 cups (½ pint) Long grain basmati rice , soaked in cold water for 20 minutes

1 ½ cups Water

2 medium Sweet onions , Finely chopped

¾ cups Tomato , Finely chopped (I use beefsteak)

2inches Ginger , Grate well
-
6 Cloves Garlic , Crushed/Pressed
-
1 Green chile , Chop until fine
-
¾ tsp Turmeric powder , Place in small bowl
-
1 tsp Red chilli powder , Place in small bowl
-
1 tsp Coriander seeds , Place in small bowl
-
1 tsp Anise seeds , Place in small bowl
-
1 small Cinnamon stick , Place in seperate small bowl
-
3 Cloves , Place in seperate small bowl
-
1 pinch Kesari powder
-
¼ tsp Garam masala powder
-
¼ cups Mint leaves
-
5 Coriander leaves , Chop until very fine
-
3 tsp Oil , I use sesame oil, for lower fat use canola oil
-
2 tsp Ghee or Dalda
-
1 Pressure Cooker
-
1 Grinder/ Mortar and Pestle/ Food processor
-
1 Garlic Press/ if you don't have one, use the flat side of a large knife

1 small bowl

Step 1: Clean The Prawns
You can have them deveined at the seafood counter or at the fish mongers depending where you get them. I have a small fish monger who does the Cutlets for me, this is not mandatory! You can just use the prawns Slice them down the middle.
Step 2: Grind The Ginger, Garlic And Anise Seeds Into A Fine Paste
This can be done in a food processor or if you are extremely masochistic you can use a mortar and pestle.
Step 3: Add Oil In The Pressure Cooker And Heat It
Begin heating up the pressure cooker at this point.
Step 4: Place Cinnamon Stick And Cloves Into Pressure Cooker
And fry them for a few seconds. DO NOT BURN THESE!
Step 5: Add Ginger-Garlic Paste, Mint Leaves, Coriander Leaves, Onion And Tomato
Fry this all very well in the pressure cooker.
Step 6: Add The Prawns
Fry these for one minute set timer as you do not want rubbery prawns.
Step 7: Add Tumeric Powder, Chilli Powder, 1.5 Cups Of Water, Salt And Rice
Stir this all together well.
Step 8: Close The Cooker With The Lid
Turn the flame to medium high once you get the pressure, put the weight on the
cooker and turn the flame to medium low and keep it for 8 minutes.
Step 9: After 10 Minutes
Remove the lid and stir the rice well and serve it with onion raita.
