SERVES 4–8 This is a quick version of the dish and is delicious serve with roast bacon or good sausages.

2 courgettes, sliced into discs

1 medium red onion, sliced

1 red pepper, sliced

1 yellow pepper, sliced

1 medium aubergine, cut lengthways, then each half sliced

5 ripe tomatoes, quartered

2 tablespoons olive oil

Salt and black pepper to taste

3 garlic cloves, chopped

Step 1:
Preheat the oven to 180°C/gas mark 4.
Step 2:
Put all the vegetables in a roasting pan and drizzle well with olive oil. Use your hands to make sure everything is coated.
Step 3:
Sprinkle with salt and pepper and the chopped garlic.
Step 4:
Roast for 15–20 minutes.
