SERVES 5–6. You can use the cheapest cut of pork meat and cut into bite-sized pieces.

1 onion, chopped

1 red pepper, chopped

1 courgette, sliced thinly

2 garlic cloves, chopped

1 heaped tablespoon plain flour

1 teaspoon paprika

1 teaspoon mild chilli powder

500g diced pork meat

400g canned chopped tomatoes

2 teaspoons soy sauce

Juice of half a lemon

Step 1:
Heat the oil in a frying pan and fry the onion until translucent. Add the pepper and the courgette and fry for 2–3 minutes; stir in the garlic. Transfer to an ovenproof dish.
Step 2:
Sieve the flour, paprika and chilli powder into a bowl. Roll the meat in the seasoned flour and coat well.
Step 3:
Using the same pan the vegetables were in, fry the pork gently until it changes colour. Add to the onion and vegetables. Add 2–3 tablespoons of water to the frying pan to remove the juices, then pour this over the meat.
Step 4:
Add the tomatoes and stir in the soy sauce and lemon juice. Season to taste, but remembering that soy sauce is very salty.
Step 5:
Cover and cook in the oven for 45 minutes at 190°C/gas mark 5, then raise the heat to 200°C/gas mark 6 and cook for 15 minutes. Serve with boiled rice or potato wedges and a green vegetable.
