MAKES ABOUT 20 BISCUITS. These are more like digestive biscuits, and they are great if you want a biscuit that isn’t too sweet. They are also good to serve with cheese.

130g softened butter

100g golden caster sugar

1 whole egg and 1 egg yolk

150g wholewheat flour

75g plain white flour

Step 1:
Preheat the oven to 180°C/gas mark 4. Grease two baking sheets.
Step 2:
Cream the butter and sugar together and beat in the eggs. The mixture should be light and soft.
Step 3:
Sieve the two flours together and add to the creamed mixture, folding in gradually.
Step 4:
When all the flour is incorporated, bring the mixture together to form a dough.
Step 5:
Roll out the dough on a clean, lightly floured surface, cut into rounds and place on the prepared baking sheets.
Step 6:
Bake for 10–15 minutes and allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
