2-3 tablespoons of Tahini
1 can chickpeas, drained but reserve the liquid
3 cloves of garlic, chopped
3 tablespoons extra virgin olive oil
2-3 tablespoons fresh lemon juice
1/4 teaspoon salt (to taste)
1 tablespoon of the chickpea liquid
Place all ingredients in a blender or food processor. Puree until
smooth. At this point you may need to adjust the flavors by adding
more of the chickpea liquid, lemon juice, olive oil, salt or
tahini.
The Culinary Chase's Note: Top the hummus with a
drizzle of extra virgin olive oil followed by a sprinkle of smoked
sweet paprika. To add a bit of spice, mix the hummus with some Jerk
seasoning. Yum!
