Best Bakes: Great British Bake Off Special

With The Great British Bake Off now back on our screens for its seventh run, we thought it would be a good opportunity to pick our favourite Videojug baking recipes from two of the show’s previous bakers, Richard Burr and Holly Bell. From giant pretzels to a homemade Snickers, these are guaranteed crowd-pleasers.

EGG AND BACON CUPS

Give your breakfast a twist with these bacon and egg cups – they’re basically like muffins but with egg and bacon! Series five winner Richard Burr shows you how to make it.

12 Rashers of Bacon
2 Slices of White Bread
4 Large Eggs
1 Clove of Garlic
1 tsp Paprika
1/2 tsp Chilli Powder
1 tbsp Sour Cream
A big handful of grated cheddar
1 tbsp Chopped Parsley
Soft Salted Butter

HOMEMADE SNICKERS

GBBO finalist Holly Bell shows you how to make your very own Snickers. This isn’t just a bar too, it’s big square slabs. Lovely.

800 g Milk Chocolate
230 g Granulated Sugar
140 g Clear Honey
1 1/2 tbsp Liquid Glucose
2 Large White Eggs
130 g Smooth Peanut Butter
400 g Dry Roasted Peanuts
370 ml Double Cream
320 g Golden Syrup
500 g Granulated Sugar
150 g Salted Butter

LEMON AND RASPBERRY CAKE

Richard Burr rustles up a lemon and raspberry cake. He baked this for his mum on Mother’s Day and she gave it the thumbs up, so why not try it yourself and see you for yourself.

590 g Unsalted Butter
340 g Caster Sugar
340 g Plain Flour
3 tsp Baking Powder
6 Large Eggs
Zest of 4 Lemons
Lemon Juice
300 g Raspberries
750 g Icing Sugar
Splash of Milk

GRANOLA BREAKFAST MUFFINS

Perfect for a late morning snack, these granola breakfast muffins have a lovely hint of lemon and a light crunch when you eat them. Morning breakfast can’t get any better.

260 g Plain Flour
220 g Brown Sugar
1/2 tsp Salt1 tsp Baking Powder
1/2 tsp Bicarbonate of Soda
100 g Granola
1 tbsp Vanilla Extract
Zest of 1 Lemon
80 ml Vegetable Oil
420 ml Milk
Juice of 1 Lemon
75 g Granola

THE PERFECT PECAN PIE

Jam-packed with mixed nuts, this sticky American classic will be sure to please hungry tums everywhere.

200 g Plain Flour
1/2 tsp Salt
100 g Caster Sugar
100 g Unsalted Butter
5 Large Eggs
75 g Unsalted Butter
100 g Golden Caster Sugar
50 g Soft Brown Sugar
100 g Golden Syrup
100 g Maple Syrup
1/2 tsp Vanilla Paste
100 g Pecan Halves
200 g Chopped Pecans
2 tbsp Spiced Rum

OMBRE CAKE

A simple recipe that looks impressive, this beautifully coloured ombre cake tastes amazing. Holly Bell shows you how to make one.

375g unsalted butter, softened
375g caster sugar
2 teaspoons vanilla extract
6 large eggs. At room temperature
375g self-raising flour
Food colouring – gel colours, not liquid

For the icing:

300g unsalted butter, softened
3 tbsp vanilla extract
3 tbsp cold water
600g icing sugar
Gel colours, as before

BIG AND SALTY PRETZELS

Love pretzels? Then you’re in for a treat because Richard Burr makes giant ones here, perfect with an ice cold beer.

500 g Strong White Flour
50 g Brown Sugar
1 tbsp Yeast
2 tsp Salt
300 ml Warm Water
3 tbsp Bicarbonate of Soda
Coarse Sea Salt for Sprinkling
