Have your little ones ever tried banana bread? Well if not, now’s the time. Here’s Michael Underwood’s recipe for this family favourite that combines the wonderful flavours of banana and cinnamon.
110 g Walnuts
230 g Plain Flour
150 g Granulated Sugar
1 tsp Baking Powder
1/4 tsp Bicarbonate Of Soda
1/4 tsp Salt
1 tsp Ground Cinnamon
2 large Eggs
110 g Unsalted Butter
500 g Very Ripe Bananas
1 tsp Vanilla Extract
STEP 1: TOAST THE WALNUTS
In a dry frying pan, lightly toast the walnuts.
STEP 2: MIX TOGETHER THE INGREDIENTS
Place the flour, sugar, cinnamon, salt, baking powder, bicarbonate of soda and the toasted nuts into a large bowl. In another bowl mix together the bananas, melted butter, eggs and vanilla extract.
STEP 3: FOLD THE MIXTURE TOGETHER
Slowly fold the banana mixture into the flour mixture. Keep it thick and lumpy. You don’t want it to go too smooth, as you’ll ruin the texture of the bread.
STEP 4: BAKE YOUR BANANA BREAD
Pour into a well greased bread tin and cook at 180 degrees for approx. one hour.
