A "pit boss" is someone in charge of an entire group of tables. A casino floor breaks down into several personnel. You have dealers, dealing the game and you have a floor person, observing both the dealers and the game. The "pit boss" is responsible for both of these groups and is also charged with taking responsibility for a number of casino tables, which is called a pit.
