I think it's a good idea to have the children involved. What it does is it gets them thinking about the trip, and it gets them excited for the trip, and it may even be educational. For instance, if you're going to the wilderness, or going to a certain place, you can talk about the type of clothes you will need. Another thing is, you want to over see it a little bit, and make sure they don't put all shorts in there or all t-shirts, so it's important to get them involved, but it's also important to oversee their packing.
