A pivot man in baseball is simply the player who takes the ball at second base, whether it's the second baseman or shortstop, to turn the double play. So he, in fact, is pivoting when he gets the ball to go from one angle, and he's pivoting to turn the ball and throw it to another angle, which is over to first base.
