How can I say 'no' to my boss?
You need to be able to do what I call "have the conversation". The conversation goes like this. "Boss, I'll do whatever you want me to." So you're afraid to speak up because you're afraid you'll lose your job. So establish the fact that "I know you're the boss, I'm not questioning you, I'm not bucking you, but if you want to get the best out of me, we need to talk about how you're using me. Because you're using me in ways where I'm counter-productive. I'm not good at some of these you're asking me to do. If you want me to do them I'll do them but you'd get better out of me if we could talk about how you're using me." Now any boss is going to want to hear that. They're going to want to say "Sure I want to get the best out of you", so have the conversation. So it's not so much about our saying 'no' as it is a matter of talking about what you're boss is asking you to do, and your ability to do it.
