Aloo Gobi Recipe
Indian Chef Ren Patel shows you how to make Aloo Gobi. This delicious potato and cauliflower curry is flavoured with cumin, black mustard, turmeric and coriander. A perfect healthy and hearty dish, spiced to perfection.

Ingredients
- 4 tbsp sunflower oil
- 1 tsp cumin seeds
- 1 tsp black mustard seeds
- 4 tbsp asafetida
- 1 cauliflower, chopped
- 2 potatoes, chopped
- 1 tsp turmeric
- 1 tsp cumin & coriander powder
Step 1: Add Cumin and Black Mustard Seeds
Add 4 tbsp sunflower oil to a pan. Heat until very hot, then add 1 tsp cumin seeds and 1 tsp black mustard seeds. Wait for the black mustard seeds to finish popping. Once the seeds stop popping, add 4 tbsp asafetida.
Step 2: Add the Cauliflower, Potatoes and Ground Spices
Add 1 chopped cauliflower, 2 chopped potatoes and 1 cup of water. Once the pan has stopped sizzling, add 1 tsp tumeric, 1 tsp cumin & coriander powder. Add 1 tsp salt and some jaggery. Then add 1 tbsp chilli and ginger paste.
Step 3: Stir and Reduce
Add 3 cloves of garlic to the potatoes and cauliflower. Mix well, turn the heat down and replace the lid. Stir every 5 minutes. Once 10-12 minutes have passed or the potatoes have cooked, remove the lid. Add some chopped coriander and stir. Place in a serving bowl and take to the table.
