Ingredients
- 380 ml water
- 85 g wholemeal flour
- 160 g white sourdough
- 400 g white flour
- 50 g dark rye flour
- 1 tsp dried malt
- 1 tsp salt
Method
Mix together 60 ml of water, 35 g of wholemeal flour and 35 g of sourdough to make the pre-starter. Set this aside for a couple of hours to develop extra flavour.
In a mixing bowl, combine the white flour, the remaining 50 g of wholemeal flour, the rye flour, the malt and the salt.
Add the pre-starter you prepared earlier, 125 g of white sourdough and the remaining 125 ml of water to the flour.
Mix all the ingredients together, then knead gently on a floured surface. Leave it covered by a bowl for about 10-15 minutes.
Place in a tray lined with baking paper. Make cuts over the top and dust with flour. Bake in a hot oven.
Once baked, tap the bottom of the loaf, if it is ready it should sound hollow.
