Traditional Baked Chicken Meal

Today we’re in my kitchen and I’m gonna make a classic, traditional baked chicken meal. I am so excited. Over here I have my Rock Cornish hens that I raised myself and I got a bunch of other fresh ingredients from my garden. A great thing about making your own stuffing is that you can add what ever you like. And so, for example, if you don’t like celery, don’t add celery. If you like onions or don’t like onions, don’t’ add onions.

Stuffing

I have the freshest ingredients and I’m gonna include a bunch of that in my stuffing.
Now I’m sure there are a lot of people out there who have, you know, tasted broccoli or a bunch of different vegetable that they don’t like. Take that person and give them that same vegetable that’s been freshly grown, home grown out of the garden and I bet you they change their minds.

These are my sautéed onions, and celery and a whole bunch of butter. Don’t be shy on the butter. Now, I’m taking my Bell seasoning (this as traditional as you can get) and I’m just lightly coating the top of the chicken with it. And now, I’m gonna go back and start rubbing it up again, so good. I got my oven, preheated right now at 350. And when I cook these I’m gonna cook these at a couple of different temperatures. I’m gonna cook them at 350 to begin with, let it slow cook. This is slow food, perfectly stuffed, not overly stuffed, fresh ingredients, they taste delicious. And, now that I’m done with this, I’m going to line the inside of the pan with my potatoes. I’m just quartering these. The oven is at 350 degrees and I’m gonna leave it in there until it’s almost ready and then I’m going to end it; and I wanna brown the outside of the chicken, and I’m gonna raise the temperature up to about 400 to 425. The chicken looks amazing, it’s cooking very, very well, it smells really good. Wow, look at that.
Now, I’m gonna take my baster here, get all the juices.
