Bread sauce is a classic British dish which is traditionally served at Christmas with roast turkey. Chef Matt Kemp from the Underground Cookery School shows you how quick it is to make.

Ingredients

  • milk
  • onion
  • bay leaves
  • nutmeg powder
  • cloves
  • stake bread, crust removed

Step 1: Infuse The Milk

Pour milk into pan, then add the onions studded with the cloves, and a few bay leaves. Add a little nutmeg powder and bring it to the boil, then remove from the heat and leave to infuse for an hour.

Step 2: Add The Bread

Pass the ingredients through a sieve to remove the bits and the return the milk to the pan. Add the stale bread to the milk, then blend into a smooth sauce.

Step 3: Reduce The Sauce

Return your blended sauce to the hob, then add some double cream and a little butter. Once hot, transfer it to a jug and serve.
