Easy Potato Soup Recipe

Leek and potato soup is a simple and delicious dish which can liven up any winter evening! Serve as a starter, or as a main course with plenty of bread and butter. Matt Kemp, chef at the Underground Cookery School, shows you how to make it in this step by step guide.

Ingredients

  • 3 small onion, chopped
  • 2 tsp chilli powder
  • 2 garlic cloves, chopped
  • 2 leeks, chopped
  • 2 large potatoes, peeled and diced
  • 570 ml chicken stock

Method

Peel and chop all your vegetables.

Heat some oil in a pan, then add the chopped onion and mix it around. Add the chilli powder and mix again.

Add the chopped garlic, the leeks and the diced potato. Mix well, then add the chicken stock.

Simmer for about 10 minutes, by which time the potatoes should be cooked. Blend up the soup and serve.
