Step 1: Cook Ingredients

Hi there, I'm going to show you how to make a beautiful potato soup, very, very simple. I've got my pan on the stove and that's been on for a while just because I want to get a bit of heat going before I put the onions in.

Now, I'm going to talk to you about cooking with spices because the best way to get the most out of your spices is to absorb them in onion. And then what happens is when you put the liquid on top of the onion, it slowly releases into whatever it is you're cooking. So I just put a few in to see if it's a nice sizzling temperature, which it is.

I'm going to put a lot more of those in and give those a bit of a shake. Lovely. And at this point, I'm now going to add the chilli, 2 tsp chili powder.

Go easy, a little bit of chili does tend to go a long way. Give that another little shake. Lovely.

And in theory, what I should do is let that cook through for about two or three minutes to get it nice, and soft, and translucent. But because we're doing this all in one very quick take, it doesn't really matter. I'm going to put the garlic in now, 2 cloves of garlic.

Garlic always goes in second because obviously it's much smaller. So, just give those a good old shake. Now, that's just going to cook down nice and quickly.

However, I'm going to add these, just to add a depth of flavour, 2 leeks. I mean, you don't have to do it. Alright, very nice, then, your potatoes which are nicely diced up.

I'm not going to put all of them in. I might put a couple more in a minute. We'll see.

Right. I've got some stock here, 1 pint chicken stock. This is a fresh chicken stock.

Of course, you can use other stock if you would like. I just always happen to have quite a lot knocking around because I'm in a kitchen. Right, so what's going to happen is we're going to cook - the stock is going to come up to a boil and then we're going to boil those until they go nice and soft.

At which point, we can then blitz it out. At which point, we can just top it off. I've got a little bit of extra stock here, just so that we can get the right texture.

So I reckon about 10 minutes of cooking, and then we should be ready for the blitzing bit. I'll see you in a minute

Step 2: Blend Soup

Right, I would say that was ready. The next job is very simple. This is a basic template for any soup recipe. What I'm going to do now is I'm going to blitz this up.

If you don't have a stick blender, a magic mixer, a food processor thing would work just as well. So I'll blitz this up and then we'll plate up. Right.

With that beautifully blitzed up, the texture is perfect. It's lovely and thick. A couple of ladles per person is generally the regulation.

I'm just going to go one more on here. Just garnish it with a little bit of parsley. There we go.

A little black pepper. A little olive oil. And there you have a perfect potato soup.
