I'm going to show you today how to cook a turkey, so think chicken, very, very similar, very similar bone structure, very, very similar and in texture and very, very similar in taste. So what I've done is I've taken off the legs. I'm going to literally strip down the bone down and I'm going to dice it up, that can be used to make a turkey pie, turkey ham pie or again taking out that bone, we can make a little mousse up, blitz it down, one of the leg with some creams and garlics and white wine.

Stuff the leg, we can make it in cream form, we can pass it off really, really nice, nice Ballantine of a turkey. Again, you know, we got the carcass here, we're going to strip down the wings. They can be used again the same way as you do as in chicken wings.

We can barbeque them down, we can do a dry rubber mat, or just do a nice normal salt and pepper, olive oil through the oven, really nice. Again, I'll pop this through the oven, about 180 to 200, you know, a nice moderate heat, salt and pepper, olive oil, through the oven and I'd say this type of bird we're looking at, just oven an hour to cook, not looking to undercook turkey, it has to be fully cooked, the same principles as chicken. That's how I cook my turkey. .
