- 300 g plain flour
- 180 g caster sugar
- 15 g baking powder
- 100 g sunflower oil
- 2 free range eggs
- 1 small eating apple, grated
- 100 g apple juice
Pre-heat your oven to 190 degrees Celsius.
Sift the flour, baking powder and caster sugar into a bowl and set aside.
Add the eggs to the oil and whisk. Add the apple juice and mix again.
Grate the apple into the dry ingredients and mix well. Add the wet ingredients to the dry ingredients and mix until everything is well incorporated.
Spoon the mixture into 12 muffin cases, filling each one about 3/4 of the way to the top.
Bake for about 16 minutes, or until they have risen and are golden brown. When the muffins are ready they should bounce back when you press them with a finger.
Leave them for about 30 minutes to cool before eating them.
