How To Bake Blueberry Scones

In this guide, Paul Mulvenna-Pegrum, head chef at the George Inn at Old Oxted shows you how to make blueberry scones.

You Will Need

  • 250 g self-raising flour
  • 55 g brown sugar
  • 55 g butter
  • 140 g fresh blueberries
  • 2 medium eggs
  • 35 ml milk
  • flour for rolling
  • icing sugar
  • scone cutter

Method

Cream together the flour, butter and sugar to a breadcrumb-like texture then add the sugar, egg, blueberries and milk, mixing all the time.

Roll the dough out to the thickness of your thumb. Use a cutter to cut the scone-shapes from the dough and place on a baking tray. Glaze with an egg-wash and bake for 25-30 minutes.

Once they are ready, dust with icing sugar and serve.
