How To Bake Carrot Muffins

Ingredients

  • 200 g spelt flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp ginger
  • 120 ml corn oil
  • 2 eggs
  • 60 ml honey
  • 1 large apple, grated
  • 75 g raisins or sultanas
  • 1 large carrot, grated
  • 1/2 tsp vanilla essence

Method

Preheat your oven to 180 degrees celsius and line a muffin tray. Sieve the dry ingredients together in a large bowl. In a seperate bowl, combine the wet ingredients, fruit and grated carrot.

Make a well in the centre of the dry ingredients, pour the wet ingredients in and mix well to combine.

Spoon into the muffin tray and bake in the oven for 20 to 25 minutes. Leave to cool slightly before serving.
