How To Bake Cranberry Muffins

Cranberries are high in antioxidants as well as having a delicious tangy taste! Sarah Spence, baker at Muffin Heaven, shows you a quick and simple recipe for making tasty cranberry muffins at home.

Ingredients

  • 300 g plain flour
  • 180 g caster sugar
  • 15 g baking powder
  • 100 g sunflower oil
  • 2 free range eggs
  • 120 g milk
  • 150 g cranberries, frozen

Method

Pre-heat your oven to 190 degrees Celsius.

Sift the flour, baking powder and sugar into a bowl and mix well.

Add the eggs to the oil and whisk lightly. Add the milk and whisk again.

Add the cranberries to the dry ingredients, mix around, and add the wet ingredients. Gently mix all the ingredients together until well combined.

Divide the mixture between 12 muffin cases, filling each one approximately 3/4 full.

Bake for about 16 minutes, or until well risen and golden brown. Check whether the muffins are ready by pressing one and seeing if it springs back.

Leave the muffins to cool for about 30 minutes before eating them.
