How To Bake Easy Peanut Butter Cookies

Ingredients
- 50 g butter, softened
- 45 g peanut butter
- 50 g caster sugar
- 45 g light brown sugar
- 1 egg
- 100 g plain flour
- zest of 1 orange
- 10 g baking powder
- 50 g unsalted peanuts
Method
Cream the butter, peanut butter, caster sugar and brown sugar together for 3 to 4 minutes. Add the egg and mix for around 30 seconds on a higher speed. Add the flour, baking powder and orange zest and mix to combine. Add the peanuts and stir in by hand.
Roll the cookie mixture into balls and place on a baking sheet or baking tray. Keep them well spaced or they will melt together. Bake at around 150 degrees celsius for 12 to 15 minutes, or until the edge is well cooked and the centre is still soft. Transfer to a cooling rack for a few minutes before serving.
