How To Bake Healthy Blueberry Muffins

These healthy blueberry muffins don't have any sugar in them making them less calorific, which means you can eat twice as many! Sarah Spence, baker for Muffin Heaven, shows you how to make them in this step by step guide.

Ingredients

  • 300 g plain flour
  • 150 g sugar substitute
  • 15 g baking powder
  • 100 g sunflower oil
  • 2 free range eggs
  • 120 g skimmed milk
  • 1 tsp vanilla extract
  • 150 g frozen blueberries

Method

Pre-heat your oven to 190 degrees Celsius.

Sift the flour, baking powder and sugar substitute into a bowl and mix.

Whisk the eggs into the sunflower oil. Add the milk and vanilla extract, and lightly whisk again.

Add the frozen blueberries to the dry ingredients and mix well.

Add the wet ingredients into the dry ingredients and gently mix until everything has incorporated.

Divide the mixture between 12 muffin cases, filling them approximately 3-4 full.

Bake for about 16 minutes, or until they are well risen and golden brown. When they are cooked they should feel firm when you press them.

Leave for 30 minutes to cool before you eat them.
