How To Bake Healthy Cupcakes
Julie Storey, owner of the Brighton cupcake company, shows you how to create a delicious and healthy cupcake recipe at home using gluten free flour and rice milk.

Ingredients
- 200 g Flour
- 50 g Cocoa Powder
- 4 tsp Baking Powder
- 120 g Sugar
- 100 g Margarine
- 1 small Banana
- 220 ml Rice Milk
Step 1: Dry Ingredients
Sieve the flour, cocoa powder, baking powder and sugar substitute together.
Step 2: Wet Ingredients
Melt the margarine in the microwave and mix in mashed banana and milk.
Step 3: Combine
Pour the wet ingredients over the dry ingredients and mix carefully, using up and over movements.
Step 4: Bake
Put 40g of cake mix into a paper cup and place in to a cupcake tray. Place in an oven preheated to 210 degrees for about 12 minutes. Cool on a wire rack.
Step 5: Decorate
Take a good quantity of the buttercream and spread over each cake. Optionally decorate with a slice of strawberry and place inside a decorative wrapper.
