Step 1: Tenderise Your Steak

To tenderise your steak put it between two sheets of cling film and give it a good old smacking, you can always cut it in half on the angle if you want later on. Prepare the barbecue by having half the coals on one side which allows you to adjust the temperature by placing the steak wherever you want. Pay attention to where the bars are, particularly if you are using a spatula, you want to slide your steak along rather than across.

Step 2: Put it on the Barbecue

Put your tenderised steak on the barbecue; we're looking at roughly a minute and a half each side.

Step 3: Turn the meat

Give the steak a turn, this serves two purposes: Keeping it on exactly the same spot will make it tough, plus the steak looks prettier with a lattice on it. One area is exposed to extreme heat but the balance can be redressed when the steak is flipped over and you can move what is now the hot end away from the heat. The amount of time you leave your steak on the grill will depend on how well done you like the meat. Ours was cooked beautifully in three minutes.
