I'm going to show you how to barbeque turkey. Now, a turkey is a big bird and it takes a long time to cook. So, there are two ways of doing it.

You can wrap the whole thing up in tin foil and set it on the barbeque, but that takes hours. For me, the best way of doing it is if you take the breast off and then slice the breast into little slices, which I have done here. You will find that they barbeque beautifully.

Now, in this case, I've taken a slice, put it between two sheets of cling film and just given it a good hammering to tenderize it, and I'm going to stick it straight on. Now, a couple of things to note, first of all, the coals are white hot which is exactly what you want them to be. I've also only got coals on half of the barbeque.

The reason for that is I can start moving the flesh from hot to medium to cooked, if I like. And if I have it cooked over here, it means that it retains its warmth while at the same, not cooking any further. If you look at the way I've set it, in accordance with the grills, is at the moment, it's at ten past seven.

But in about thirty seconds time, I'm going to switch that to ten to five. So I'm going to switch it by ninety degrees. Also, look at the relation of the bars.

They are actually head on. If you happen to be using a spatula, you can just slide all the way along rather than across, which is going to be a far bumpier ride. Let's have a quick look, shall we? Yeah, that's nice and done.

I'm just going to turn that by ninety degrees and we're going to leave that there for another thirty seconds. Right, that's ready. Look at that, beautiful.

I'm just going to carry on, cooking that. As I said before, ten to five, then we're going to turn it by ninety degrees and have it at ten past seven. Now, that's beautifully cooked and we're just going to stick that to the side.

It's going to retain its warmth, but it's not going to cook any further. That's a beautiful way of cooking turkey on the barbeque. |Learn how to barbeque turkey by the numbers.
