Matt Kemp teaches you how to cook easy and perfect barbecued asparagus. Asparagus is excellent as a side dish and is very tasty when barbecued and seasoned with some basic ingredients.
I've got some beautiful English asparagus. I've just taken the tops off, and you do that literally just by snapping at the point where they break. And when barbecuing asparagus, it's particularly important to lay them at right angles to the grill.
Obviously, if you don't, then they run the risk of slipping inside. Now, what I've done for this particular barbeque is I've got charcoal all the way down one half, so if they get a little bit overcooked, I can just move them from side to side. But at the moment, they're looking absolutely lovely.
But if you want to, you can always drag them over and reach for your olive oil. I've got mine here, and if you just run a little bit across, you can then roll them along the grill, like that. The barbeque quite likes that.
Normally, I season them at the very end, so just a little bit of salt and pepper, at the last moment. If you put too much olive oil on, then all that happens is you create a bigger fire down on the barbeque, and it burns up all your charcoal. So, just keep rolling them.
If you try and turn them, that's what happens, funny enough. That's a perfect example, right on queue, seldom happens. But look, you can see, the asparagus now are cooking up really lovely.
Now, here's an interesting thing, these ones are cooked a little bit more than these ones, so I'm just going to move these ones over to this side, as I was talking about before, and I want to get those ones nicely colored. Then, just a little bit of seasoning, a little squeeze of lemon juice, lovely! Well, those are all now cooked to pretty much exactly the same consistency, and that's how to barbeque asparagus. .
