Step 1: Prepare your Pork Tenderloin
Slice your tenderloin into two medium sized portions. Place some cling film over the top and hammer the tenderloins to form 2 escalopes.
Step 2: Barbecue the Escalopes
Add a pinch of salt and pepper. Place the escalopes onto the barbecue. Cook for about a minute and a half each side.
Step 3: Add the Sage, Mozzarella and Parma Ham
Start layering the tenderloins on the barbecue to create a saltimbocca. Add some sage, mozzarella, parma ham to the escalopes and cook for another minute or so until the escalopes are cooked and the mozzarella is nicely melted.
