I'm going to show you how to cook a pork tenderloin on the barbecue, but actually I'm going to do it with a little bit of a difference. I've got the loin of pork here and I'm just going to take the top bit off. I'm going to take two or three.

I think I'm going to do two of these. So I'm going to take two of those loins and stick them on here like that and grab my cling film. I'm just going to hammer these into two little escallops.

We're going to do a little salt and boko with those, which is basically sage, mozzarella, and Parma ham, which I've got on the dish over there. So we've got our loins there. Now is a nice time to add just a little pinch of salt and pepper which I've got over here.

I'll do the other sides as well. I'm going to plate those up and we're going to take both plates outside and start a bit of barbecuing. Now, what I'm going to do to begin with is - lovely hot barbecue there; it's very hot here - so I'm actually just going to go halfway.

We're just going to cook those for a minute and a half on his side. If you think about it, if I put them right in the eye of the storm, so to speak, they're going to burn really quickly, which is why it's good if you're barbecuing things, just to have the coals on half of the barbecue. Then it's kind of like a temperature control in the same way that you have an oven that you have a control.

It's a similar sort of variation on that theme. Right now, they are completely cooked on one side. If we just have a look, as you can see, they are beautifully cooked.

I'm just going to take them away from the really hot part. I'm going to now start layering them up as a salt and boko. So over here, we have the sage.

We're going to put a little bit of mozzarella on there. We've got a little bit of Parma ham which is going on the top. What we're going to do is we're just going to carry on cooking that until the mozzarella starts to melt.

The reality is these escallops will probably be cooked in about a minute's time. Right, well, as you can see, the mozzarellas really lovely and melting there, it's coming along beautifully, so we can just set those off the barbecue. There we go.

That's how you barbecue pork tenderloin but more importantly, I think that's how you do it properly. That's a pork tenderloin salt and boko barbecued. Beautiful.
