Hi, there! I'm going to show you how to barbecue prawns. Now, I've gone for the really enormous ones today because I just want to over-emphasize how easy it is, and I think it's easier to do with bigger crustacean, I think, would be the correct term. Now if you have a look at this barbecue, it's been set up beautifully.
We've got the briskets on half the side of the barbecue. I prefer briskets to coal because they last a lot longer. If you have it on one side of the barbecue, what that means is this side can be used to control the temperature.
So if they're getting a little bit charred or a little bit over-charred over here, then you can just move them to the left slightly and vice versa. So, those will now just carry on. If you have a look at that, how do you know when they're cooked? When they change color.
If you look at their color now and then look at them in about three or four minutes' time, you'll see an enormous difference. When you lay the prawns on the barbecue, try and lay them at right angles to the slats on the grill. If you lay them lengthwise, particularly if they're much smaller, you run the risk of them falling through the middle.
Now if we have a look, that's beginning now to color beautifully. But I'm just going to play a little barbecue trick because the ones on the left-hand side have been exposed to the lower heat so I'm going to move them over to the hottest part of the barbecue and I'm going to put these ones over here. I'm just going to keep rotating them.
If you have a look at the color, you can see they are cooked all the way through. Whenever you cook prawns, you're really looking for that crimson-y orange – well, it's orange, isn't it? - to indicate that they are cooked all the way through. Now, I think all you need to do is a dash of lemon juice and black pepper, a bit of red chili, maybe some cooked garlic and butter over that.
