Hi there, I'm Matt from the Underground Cookery School and today, I'm going to do a video cookery lesson for you. I'm going to show you how to barbeque spare ribs, which is actually a pretty simple thing to do. So, I thought what we'd do is make the sauce, put it on them and then take them out there so we will have barbeque spare ribs.
There are actually only 4 ingredients included, which are soy sauce so I'm just going to add quite a lot of soy sauce, I'm going to add some ketchup. Try and use Heinz because I think that's the best. Use it for everything.
Some HP sauce. Did you know that stood for Houses of Parliament sauce? That's why there's a picture of Houses of Parliament on there. For all you people that are watching outside of England, probably won't know what I'm talking about.
Add a bit of dark sorry soft brown sugar, and then just give that a good old mix. Now, funny enough, I was going to suggest adding a little bit of water to that but I've got the perfect consistency there and I'm pretty happy with that. Flavor is really important.
Add a little bit more of HP in there. I think just to spice it up and we should be there. I mean you can use recipes as a guide I was going to say, but your own personal taste.
So that's our barbeque sauce complete. And actually, the thing I should have said is HP is just a particular brand. You can use any brown sauce.
Brown sauce is obviously the key to that. Right, what I'm going to do now is just gently massage the barbeque sauce into these lovely cold ribs, just so that we've got a lovely all around flavor to them. And my advice is if you're doing barbeque spare ribs is to leave them to marinate overnight just to really intensify that flavor.
Those are now ready to go on the barbeque, so I'm going to show you how to barbeque those in a sec. We made it out to the BBQ. What we're going to do now is cook them straight onto the BBQ.
On they go. We're just going to cook these until they're done. I've got a couple of other things going on at the same time.
Just like any other BBQ, isn't it? Obviously, cooking times vary. This isn't a particularly hot barbeque because it's on its way out. And by that, I mean the coals are beginning to fizzle out.
These have been on for about five or six minutes. I've just been turning them. Those are now ready, so we're just going to plate those off.
But they are absolutely gorgeous and there you have barbeque ribs.
