Hello, I'm going to show you how to boil chicken, but to me, that sounds quite dull so we're going to make it a little bit more exciting. I've got a poussin because this recipe works really nicely with that. All I'm going to do is pop that baby chicken, basically, into a pan.
Cover it with the stock, put in a bay leaf and a couple of cloves of pepper. Now if I stick that on the hob, what we're going to do is this. You can use water by the way, it doesn't matter but the idea is that what we'll do afterwards is with the stock that we bought, the chicken will reduce down to make a sauce.
I'll show you about that later. What I'm going to do first is I'm going to bring the pan/stock up to the boil and as soon as it comes up to the boil, we're going to take it off the heat and we're just going to leave it on the side in the pan for about forty-five minutes and it's going to be absolutely fantastic. Right, now that's come up to the boil so as you can see, we're already beginning to leak out.
I'm going to take that off the heat, I'm going to set it aside and I'm just going to let it sit in there. Initially, I said forty-five minutes but actually, I think it's going to take a lot less. These are much smaller birds, so probably about twenty-five minutes.
Well, that's now just been cooking in its own juices and if I take it out, I know it's rather clumsy but actually, that's so tender it's cooked all the way through. I mean that is absolutely properly the way you cook/boil chicken. .
